Modeled after the music industry, Pilot serves as a launch pad for start-up beverage businesses, offering assistance with fine-tuning recipes, production, business development, marketing, distribution and more. Our Milwaukee, WI space offers an expansive restaurant, rooftop, and beer garden, with weekly brewery tours and featured events. On the brewery side, we’re busy growing brands from Milwaukee and across the world.

Frequently Asked Questions:

  • From spring through fall, the rooftop is available for guests to check out and enjoy a beverage up there. We do our best to staff the rooftop most days of the week, weather permitting. If the rooftop is not staffed nor rented out privately, you may order a drink at the bar and bring it to the rooftop!

    Sometimes we hold private parties on our rooftop.. because.. it’s amazing up here! We have a fun little open/closed schedule on the top of this page to help you plan your visit better!

  • Our beer garden is dog friendly! You may order food at our host stand and they will give you a buzzer that signals when your food is ready for pick-up.

  • We appreciate you asking, but unfortunately this is not allowed. Buying 4-packs and 6-packs are meant to be enjoyed off-premise.

  • We do not accept cash, but we do accept credit cards and Apple Pay.

  • Yes! We've hosted wedding ceremonies, receptions, corporate events, meetings, rehearsal dinners, baby showers, concerts, and much more! Please reach out to MkeEvents@pilotprojectbrewing.com to book your next event with us.

  • Absolutely!

    You can place reservations online via SevenRooms HERE or send us an email at MkeReservations@pilotprojectbrewing.com. Reservations with eight or more guests will receive their bill on one tab and an automatic gratuity of 20% will be applied.
