Modeled after the music industry, Pilot serves as a launch pad for start-up beverage businesses, offering assistance with fine-tuning recipes, production, business development, marketing, distribution and more. Our Milwaukee, WI space offers an expansive restaurant, rooftop, and beer garden, with weekly brewery tours and featured events. On the brewery side, we’re busy growing brands from Milwaukee and across the world.

Q - Is the rooftop open?

A - The rooftop is available for guests to check out and enjoy a beverage up there. We do our best to staff the rooftop most days of the week, weather permitting. If the rooftop is not staffed nor rented out privately, you may order a drink at the bar and bring it to the rooftop!

Q - Can I bring food on the rooftop?

A - You may order food at our host stand and they will give you a buzzer that signals when your food is ready for pick-up.

Q - Are you dog friendly?

A - Our beer garden is dog friendly! You may order food at our host stand and they will give you a buzzer that signals when your food is ready for pick-up.

Q - Can I buy a 4-pack of beer and drink it in the beer garden?

A - We appreciate you asking, but unfortunately this is not allowed. Buying 4-packs and 6-packs are meant to be enjoyed off-premise.

Q - Do you accept cash?

A - We do not accept cash, but we do accept credit cards and Apple Pay.

Q - Do you host private events?

A - Yes! We've hosted wedding ceremonies, receptions, corporate events, meetings, rehearsal dinners, baby showers, concerts, and much more! Please reach out to MkeEvents@pilotprojectbrewing.com to book your next event with us.

Q - What about regular reservations? Do you accept those?

A - Absolutely! You can place reservations online via Tock here or send us an email at MkeReservations@pilotprojectbrewing.com. Reservations with eight or more guests will receive their bill on one tab and an automatic gratuity of 20% will be applied.
