As a brewery incubator in the craft beer hotbed of Logan Square, Chicago and Milwaukee, WI, our approach to brewing industry-defining products happens by fostering relentless experimentation of new brewing recipes, breweries, collaborations, styles, and concepts. LINE COOK
We are looking for hard-working line cooks with a taste for craft beer to join the Pilot Project Brewing team. Our spirited and dedicated line cooks help us accomplish this by embodying the Pilot Project brand and collaborating in the beer-food pairing process. We expect our line cooks to transform high quality ingredients into unique small plates that compliment our beers through preparing, cooking and plating food items in an efficient manner.
PRIMARY RESPONSIBILITIES
Communicate openly and respectfully with all team members
Prepare, fry, grill and plate a multitude of culinary items under the tutelage of our Head Chef and Chef de Cuisine
Maintain standards for keeping the kitchen and facility clean and sanitary
Follows recipes and complies with portion sizes, quality standards, department rules and procedures, and Department of Health regulations
Perform other duties as assigned
QUALIFICATIONS
Minimum of 2 year experience in casual dining environment
Must be 21+ years of age
Food handlers card certification required
Full-time and part-time positions available with nights, weekends, and holiday availability required (closed on Christmas Eve, Christmas, and Thanksgiving)
Must be able to lift 50lbs
Be punctual, kind-hearted, patient, and stay awesome

Director of Business Development
We are seeking a highly motivated and strategic Director of Business Development to drive growth through lead generation of innovative beverage brands, brand partnerships, and contract production sales. This individual will play a critical role in expanding our diverse portfolio of beverage brands, fostering industry relationships, and maximizing revenue opportunities for one of Pilot’s largest revenue streams. The ideal candidate has a deep understanding of the beverage industry, strong sales acumen, and a passion for innovation.
PRIMARY RESPONSIBILITIES
Incubator Program Oversight: Lead and manage our incubator program, including sourcing and discovering talent, orchestrating bi-annual auditions to identify and support emerging beverage brands, and onboarding relationship management.
Lead Generation & Sales Strategy: Develop and implement a proactive strategy for identifying and securing new business opportunities in contract production and brand partnerships.
Client Acquisition & Relationship Management: Cultivate and maintain strong relationships with potential and existing beverage partners, ensuring long-term partnerships and customer satisfaction.
Partnership Development: Identify and negotiate strategic partnerships with beverage and non-beverage brands, suppliers, and key industry stakeholders to enhance Pilot Project Brewing’s market presence and influence as an innovative stalwart in the beverage industry.
Contract Production Sales: Drive revenue growth by selling contract production services, when available, to emerging and established beverage brands, ensuring seamless onboarding, execution, and minimal production downtime.
Market Research & Competitive Analysis: Stay informed on industry trends, market demands, and competitive landscape to identify new opportunities for business expansion and innovation.
Collaboration & Cross-Functional Leadership: Work closely with marketing, sales, production, hospitality, and finance teams to align business development initiatives with company goals.
Performance Metrics & Reporting: Track and analyze key performance indicators for each brand (KPIs) to measure success and optimize Pilot Project’s strategies for continuous growth for our company and portfolio.
QUALIFICATIONS + EXPERIENCE
Bachelor's degree in Business, Marketing, Sales, or a related field.
8+ years of experience in business development, sales, or a related role in the beverage, food & beverage, or consumer packaged goods (CPG) industry.
Proven track record of securing high-value partnerships and driving revenue growth.
Strong understanding of beverage manufacturing, contract production, and supply chain operations.
Excellent communication, negotiation, and interpersonal skills.
Self-motivated, results-driven, and able to thrive in a fast-paced environment.
Ability to travel as needed for meetings, industry events, and networking opportunities.
